the science of freshness: how to store your fruits and veggies

Who knew the science of separating vegetables was so detailed? One example: one must consider whether the produce is an ethylene emitter and store with ONLY others of its kind. Click here to check out an absolutely fantastic article brought to you by the folks at Wild Oats on the subject of keeping your produce its freshest longest. A few general tips are below.

  • Never refrigerate and keep them separate from each other: potatoes, onions, winter squash, garlic
  • Never refrigerate: avocados, bananas (unripe), nectarines, peaches, pears, plums, tomatoes
  • Refrigerate: apples, apricots, cantaloupe, figs, honeydew
  • Keep these away from all of those named above: bananas (ripe), broccoli, brussel sprouts, cabbage, carrots, cauliflower, cucumbers, eggplant, lettuce and other leafy greens, parsley, peas, peppers squash, sweet potatoes, watermelon
