Growing up, my mother always made an extra pumpkin pie for breakfast the morning after Thanksgiving. It was fun for us kids to have dessert for breakfast. Here’s another breakfast suggestion from Karen Navarro on our sales team that’ll be super easy and impressive to make this weekend!
Warm Apple Breakfast Cake Recipe
Other than being on the sales team here at simplehuman, my passion outside of work is cooking and baking. I like recipes that aren’t too complicated, because simple ingredients can make a really fantastic dish. Here is an easy recipe that will make your guests feel like you have been baking for hours–I usually serve this for breakfast on Saturday morning or you can have it as dessert, too!
3 granny smith apples
3 tbs of butter
1 tsp of cinnamon
1 tsp of nutmeg
¼ cup of brown sugar
3 tbs of lemon juice
½ cup of heavy cream
Prepared pancake batter of your choice
1. Preheat the oven to 350 degrees.
2. Slice the apples into wedges.
3. In a bowl, mix together the apples, cinnamon, nutmeg, brown sugar, and lemon juice together until the apples are well coated
4. Using a stainless steel pan (or an oven safe pan) melt the butter until it sizzles.
5. Place the apples into the pan.
6. Sauté for about 5 minutes or until the apples are tender.
7. Add the cream into the pan and sauté the apples and cream for about 2 minutes.
8. Pour the prepared pancake batter over the apples and cover for about 3-5 minutes. (batter will create a cake like consistency)
9. Transfer the pan to into the oven for 5-6 minutes.
10. To serve, cut a slice, pour heavy cream over the slice, and serve immediately!
