I wish I had a copy of eartheasy’s entry on convenient one-pot cooking conveniently taped to the fridge when I was in college—they list some great and easy recipes for everything from a taco skillet supreme to sausage paella to even an herbed cod dish. You can make dishes with either rice, potatoes, or pasta as a base, so that dishes are as substantial as they are simple to make. Plus, cleanup is a breeze when you’re cooking everything in one pot!
